Have you ever sat down to put together your meal plan for the week and just had no clue what to put down? I am that girl just about every week. Which isn’t good because this causes me to plan the exact same meals every week.

Meals like spaghetti, chicken and rice, and taco bowls (just kidding, this one NEVER gets old). I mean who doesn’t have meals that they make on a regular basis? I know that the same meals over and over each week have to get sooo boring for some, but for the most part, they do serve a purpose.

Those meals are frequent because 1) They are cheap and 2) They are easy to prepare.

I have to admit that I’m the type of person that can eat the same things over and over and not get bored, but I know that Erik (and most people) isn’t that way so I do try to spice things up every once in a while.

Which brings me to this amazingly yummy meal. Cilantro Lime Chicken. No only is it cheap, but it makes a TON.  So if you have a large family or enjoy leftovers then this is the bee’s knees!

The best part of this recipe that the cilantro lime sauce is so versatile. So, by all means, make the sauce and then top it on everything!

Cilantro Lime Chicken

Cilantro Lime Sauce

Instructions
Cilantro Lime Sauce (you can make this in advance)
  1. We'll be using a ninja to make the sauce. Put the all the ingredients EXCEPT the sour cream in there and process briefly.
  2. Add the sour cream and process till fully blended.
  3. Set aside.
Finishing the dish
  1. Cook the chicken on the stove. Season to taste with Mrs. Dash.
  2. Use the cooking time of the chicken to cut and mix the cabbage with half the cilantro lime sauce. Set aside to marinate.
  3. After about 10 to 15 minutes, the chicken should be done. Remove it from the stove and let it sit for a few minutes so it retains its juiciness.
  4. Slice the chicken and plate it on top of the cabbage slaw mix. Top with more of the cilantro lime sauce.
  5. Serve with avocado if desired.
