Breakfast in our house is different for everyone. I am good with a smoothie (my latest obsession), and the little guy is good with cereal.  Erik needs something that will fill him up to keep him going all morning.  This is why I came up with breakfast burritos for him.  So after a few months, we finally got the formula down to not only get a months worth of breakfast but to keep the cost down.

This recipe yields 20 burritos and cost 89 cents per burrito!  I mean, you can’t even get a good cup of coffee for that price.

Here’s the price breakdown.  It’s important to know that these prices are for the Orlando, FL area.

Sausage Breakfast Burritos Breakdown:

2lbs Gwantely Sausage: $1.77ea

2 Bags Shredded Cheese (Great Value Brand): $2.37ea

2 Packs La Banerita 10ct Flour Tortillas: $2.38ea

4 Lg Potatoes: Around $2.50 total (Varies)

18 Lg Eggs: $2.32

Total: $17.86, divided by 20 comes to .89 each!

Sausage Breakfast Burritos

  1. In a skillet, cook sausage till cooked all the way through.
  2. While cooking the sausage, clean and chop the potato and throw into a food processor.
  3. Remove cooked sausage and set aside for later in a large mixing bowl.
  4. Put finely chopped potatoes in skillet and cook till they are cooked to your liking. Season as desired.

  5. Once potatoes are fully cooked, add to mixing bowl with sausage and set aside.
  6. Mix 18 eggs with a dash of milk and any seasonings desired. Then scramble them on the stove.

  7. Once eggs are cooked add to sausage and potatoes.
  8. Lay out burritos and put put 1/4C cheese in the middle

  9. Take 1/2C of burrito filling and place on each burrito
  10. Fold burritos and wrap with plastic wrap

  11. Place burritos in freezer bag and put into the freezer
  12. Take out a burrito each afternoon to thaw for the next morning.
